What do you do when you want coleslaw but you don’t have cabbage? Improvise with carrots and apples to make a carrot apple slaw instead.
My husband loves it when I take things I have in the fridge and come up with ways to use it up. I usually do this for two reasons: not to waste food (throw it out) and because I don’t feel like running to the grocery store to get more supplies. This is one of those recipes. This turned out so tasty it was like having dessert — without the guilt.
Shred the two good-sized carrots and place in a bowl. Slice the apple into matchsticks and toss into bowl with carrots.
Squeeze the juice of half a lemon onto the top of the apple. This will keep it from browning.
Add the dried fruit and seeds to the mixture, along with the mayo, soft goat’s cheese and pepper.
- 2 Carrots, shredded
- 1 Apple, sliced like matchsticks
- 1/2 lemon, squeezed
- 1/4 cup fruit fusion dried fruit and nut mix
- 1/2 cup mayonnaise
- 2 T soft goat's cheese
- Shred carrots
- Slice apple like matchsticks
- Squeeze the juice of half a lemon over the apples
- Add fruit fusion, mayonnaise to carrots and apples and mix well
- Add 2 T soft goat's cheese, crumbled
- Mix gently
- Add pepper to taste
